I’ve been “seriously”, well, more serious than my neighbours, prepping for about a year now and I’m constantly learning. I came across and article recently talking about the nutritional value of the foods we store. Until then, I was just buying mostly can goods that are close to what we normally eat. I figured we be relying more on canned goods than frozen foods should the emergency last more than a couple of days. I hadn’t really thought much about the nutritional considerations until that article.
I knew that calories were a big concern as the average person needs 2000 calories a day depending on activity level. During an emergency this rises significantly and so I had been paying some attention to that. What I hadn’t paid attention to was the actual nutritional values in terms of the vitamins. Turns out, a lot of canned goods are lacking a lot of vitamins. I’ve now added vitamin supplements to my prepping stocks.

While most of us think fresh fruits and vegetables are the best, canned fruits and veggies contain many of the same, and sometimes more, vitamins and minerals than fresh, reports WebMD. The American Dietetic Association noted in 2006 that “canned produce is picked and canned at its peak, so even though the heating process destroys some vitamins, the majority of nutrients remain.” Canned tomatoes, for instance, contain greater amounts of lycopene than fresh tomatoes. Purchase canned fruits and vegetables for your survival storage of vitamins and minerals.
Salt is another big concern as canned foods can contain a lot of salt as a preservative. Some brands are better than others and I now check the labels for salt content. It takes a little time at first, but once you know which brand you want, you just buy that from now on.
Family Medical Concerns
Family medical concerns is another area I was overlooking in my food stocks. Remember, during an emergency if you run out of your medication, you may have to pay closer attention to what you’re eating. For example, I have high blood pressure and I know pay close attention to the salt content of my stocks. If you have family members with medical conditions, you might want to factor in which food stocks will best help them if they run out of medication.
